The rice sheets are made from regular rice mixed with tapioca flour and cassava to create a fragrant and chewy texture. After soaking and grinding the rice, the batter is carefully adjusted so the sheets don’t break when steamed. Each layer is poured evenly to avoid being too thick or too thin. The chicken meat and giblets are also carefully prepared. Free-range chickens are chosen for firmer, non-tough meat. The giblets are lightly marinated with spices, onion, and garlic to remove any unpleasant odor. The shop opens from 1:00 PM until late afternoon, but many visitors arrive earlier.
